Our Story

From a small kitchen experiment to a beloved neighborhood bakery, our journey has been guided by one principle: never compromise on quality.

How it began

Fika Bakery started in 2018 when founder Ingrid Eriksson decided to leave her career in architecture to pursue her true passion. Growing up in a small town in Dalarna, Ingrid learned to bake alongside her grandmother, absorbing techniques and recipes that had been passed down through four generations.

What began as weekend baking for friends and neighbors quickly grew into something larger. People began requesting her sourdough loaves and kanelbullar for their own gatherings. The demand became impossible to ignore.

With encouragement from the community and a small loan, Ingrid transformed a vacant storefront into what is now Fika Bakery. The original sourdough starter she began cultivating that first winter still lives in our kitchen today.

Our philosophy

We believe that baking is an act of generosity. It requires patience, attention, and a willingness to work with living ingredients that have their own rhythms and needs. Yeast doesn't hurry, dough cannot be forced, and flavor develops in its own time.

This philosophy extends beyond the kitchen. We've built relationships with our suppliers based on trust and shared values. We pay fair prices for exceptional ingredients because we know that quality begins at the source.

Authenticity

Every recipe we use has been tested and refined. We don't cut corners or substitute ingredients for cost savings. What we make is genuine.

Our bakery exists because of the people who support us. We give back through donations to local shelters and participate in community events throughout the year.

Sustainability

We minimize waste by planning our production carefully and composting what cannot be used. Our packaging is recyclable, and we encourage customers to bring their own bags.

Meet the team

Our small but dedicated team brings diverse skills and shared passion to the bakery. Ingrid leads the baking operations with assistance from two experienced bakers, Lars and Sofia, who each bring their own specialties to the kitchen.

Lars trained in France and brings expertise in laminated doughs and viennoiserie. Sofia specializes in decorative work and creates all of our custom cakes. Together, they ensure that every item leaving our kitchen meets our exacting standards.

Our front-of-house team, led by Emma, ensures that every customer feels welcomed and finds exactly what they're looking for. Their knowledge of our products and genuine enthusiasm make each visit feel personal.

As we've grown, we've remained committed to the values that defined our earliest days. While we've expanded our product line and increased production capacity, we've never scaled beyond what we can manage while maintaining quality.

Our vision for the future includes deepening our relationships with local producers, continuing to experiment with new recipes while honoring tradition, and ensuring that Fika Bakery remains a gathering place for our community.
